Yesterday was Easter dinner (mostly meat for me, and a few nibbles of some raw vegetables) today I got a carnitas salad from chipotle with sour cream and cheese. 4 net carbs and delightfully filling! Think I will stick to chicken next time. Carnitas were a bit salty.

I pretty much have a salad every weekday - 1c spinach, 1c romaine, .5c assorted extras like cucumber, red pepper, radish, tomato, some mixture of protein - boiled eggs, bacon, turkey, avocado, some type of cheese and generally ranch or blue cheese dressing.

Since there are so many different proteins and veggie combo's I don't seem to get bored with it. Weekends are totally random based on activity.

Had an 'unwich' from Jimmy Johns, Italian Style - basically a lettuce wrap full of italian meats, mayo, cheese, hot peppers and tomoatoes. I needed the fatty meat to keep the cravings at bah.

I fell off the wagon Saturday night - was visiting my parents who believe in portion control/low fat. After 2 days I was starving from not enough fat. Ended up eating the family dinner with them on Saturday, but I got back on the wagon the next morning. I think I'm picking up some fatty chops or something for dinner.

today was more snacky than a meal- pb and j Quest bar, smoked deli turkey slices and a string cheese.....all yummy!

I have the same lunch almost everyday...tuna salad..sometimes with celery, sometimes with some string cheese...usually tuna everyday...and I love it!

I had a tuna salad. Albacore mixed in with mayo and some celery and red bell pepper. Also had some scraps of leftover Easter ham.

Yesterday--no lunch. I'm only eating twice daily on weekends most of the time.

Today--mixed nuts. I keep a huge ol jug in the car, that's my lunch most days.

Today was shrimp salad with scallion and celery, and leftover grilled asparagus and zuchini from Easter (we grilled..ribeye for me, burgers for dh)

I love your salad idea. I wish I could accomplish that. You make it sound so easy to put together. Its a huge ordeal for me to 'put together' a salad! I'm going to try it a few times a week.
