Artichoke and cheese chicken
I adapted this from an old favorite of ours. The original had the filling inside, then breaded.
1 lb. chicken tenders, sauteed in 1 T. olive oil. Place into a shallow baking dish in a single layer.
1 c. jack cheese, shredded
1/2 c. mayonnaise
1 small jar artichoke hearts, drained, chopped
1 tsp. dried parsley
Mix together, and spoon over chicken. Bake at 375 for 20-25 minutes or until cheese is brown and bubbly. Let sit for a few minutes before serving. I came up with 12 carbs for the whole dish. You could get 2-4 servings out of this depending on what else you serve. I had broccoli and cauliflower, which is good with this.
