Default crab cake

Hi Karen.

I just came back from dinner and my BF ordered crab cakes!!! I had one bite as i suspected that they contain breadcrumb...but they were so yummy!!!!!

I want to make the LC version so i can enjoy them.

so...my question is...can i use flaxmeal to bind the ingredients together?? I am thinking of mixing up some crabmeat, egg, mayo, chopped pepper, onion, parsley and flaxmeal.

Will this work???

Flax meal will work, but be careful about using too much. It might make the cakes gritty.

You can also use finely chopped, neutral tasting fish as a binder. Chop it small and beat it until it's sticky. Then add the rest of the ingredients.

Years ago I had crabcakes in a restaurant in the Washington D.C. area, and it was obvious that the only binder used was egg. I've never had better. They were very tender, fell apart on the plate, so I'm sure they must have taken some finesse while sauteeing, but they were marvelous.
