Default steel cut irish oats

Hi Karen:
This is a follow-up on a previous post (in Kitchen Help) regarding a replacement for rice in stuffed grape leaves. This spiked my interest in developing a cabbage roll dish. I did try using McCann's steel cut irish oats as a replacement for the rice and it worked just fine---I did, however, have to rinse the cooked oats under running water to remove the "mushiness" (and a lot of the starch, i.e., carbs... and that's a good thing!)). After rinsing, the oats where separate and about the size of raw pearled barley - I mixed them with cooked ground beef, added some spices to my taste, wrapped the mixture up in blanched cabbage leaves, put them in a casserole, added some tomato juice, baked them ... and voila, I had some delicious low carb cabbage rolls. I'm not in a position to give an exact recipe for this, nor an exact carb count... I just know that it worked well and tasted great.

I'm going to try this. I use steel cut oats once a year in a wonderful stuffing for Thanksgiving and love them. I know what you mean by the "mushiness", the recipe I use for stuffing does recommend rinsing. So what do you know about the carb count of steel cut oats? I have even slow cooked them in a crock pot like oatmeal and had them the next morning. If these things are on the lower side of carb count, they would sure solve alot of craving I have for hot cereal. Let me know what you find out...

They're not exactly what I would call low, but that's all relative.

1/4 cup of dry oat groats is around 21 grams of net carbs.

You may want to try flax meal as a hot cereal. It's very low carb and high in fiber. Here's a thread full of information on it...
