Made some changes from the original and came up with this - had it for dinner tonight my dh didn't even notice the difference.

dressing
juice of one fresh lemon
1/2 cup splenda
Mix thoroughly then add 1 egg yolk mix and add 1/3 cup olive oil - blend together and put in fridge\

salad
4 - 6 cups baby spinach
approx 3/4 cup fresh or frozen and drained strawberries

just before serving add dressing and approx 1/4 cup toasted pine nuts

Gee, I'd forgotten all about this one! Thanks for sharing the lowcarb dressing recipe. Ah, strawberries - kinda reassures that nicer weather isn't too far off. (Wiarton Willy had better be right - he saw his shadow, so an early spring .. ..)

Shouldn't that be the other way around? He saw his shadow so he goes back to hide for another 6 weeks? If he had satyed out it would be an early spring?

(Confused in Cold Lake, as all the groundhogs here seem to have decided to hit the snooze button. Maybe they'll get up next week?)

LOL ... What I meant to say is the opposite - that he did NOT see his shadow, so an early spring ... .. That'll teach ME for trying to make sense when it's way past my bedtime!

p.s. - to those who may not know, or may have forgotten, last year, Groundhog Day 2000, the crowds gathered early to see the great albino groundhog Wiarton Willie do his thing. Well, Willie did not come out at all, and after much impatience and grumbling from the disgruntled crowd, officials took a peak into his mound, and to their utter dismay, found him keeled over DEAD!! Kind of embarassing, considering this particular event is a BIG tourist draw for this tiny Ontario village. But, it seems the tradition will be carried on with elan by the NEW Wiarton Willie.
