Bacon-Mustard Vinaigrette
I came up with this today b/c I didn't want to put olive oil on my salad. Olive oil simply does not satisfy my hunger like animal fat does. This was really yummy. Makes 1 serving.
In a small pan, melt about 1 T bacon drippings over very low heat--you just want it warm enough to melt the fat, not to make it hot. Add about 1 T vinegar, sprinkle in some oregano & basil, garlic & onion powder, salt & pepper, and about 1/2 tsp dijon mustard. Add about about 1/2 packet of Splenda. Stir it all together, taste and adjust the seasonings/vinegar and pour over mixed greens.
I'm from SC, so I always have a small jar of bacon drippings in my refridgerator.
