Question Mashed Autumn Veggies w/ Bacon & Scallions

I found this recipe on the atkins website and I am curious if anyone here has ever had it and if so, was it good. I am not a fan of turnips and I have only barely like sweet potatoes once or twice in my life so both of these veggies really arent appealing to me. I am, however, trying to really try and eat new things and this just happens to be something that actually SOUNDS interesting to me. I am still skeptical and thought I would get others opinions of this recipe though! Hopefully SOMEONE has had it!!!

It has me drooling! I adore turnips and yams or sweet potatoes. But they're not what I would call low carb (yams, sweet potatoes).

Well, I didnt think so either, but I got the recipe right from the atkins webpage!! It supposedly only has 12 carbs per serving, 8 net carbs....so I dont know!?!

Couldn't you make something vey similar with cauliflower? Of course, it wouldn't have the sexy name of, "Autumn Veggies w/ Bacon & Scallions" (which I admit caught my attention!) but I think it would still be good.

Really it just depends on what stage of Atkins you are on and what your total carb intake for the day is. In OWL you are suposed to be getting your carbs from veggies, so this would be much better and healthier then having SF chocolates or SF cookies.

Sweet potatoes are more moderate carb, but this could be why the recipe cuts them down with some lower carb turnips. The yams are very filling and full of Vitamin A however. (Note there is a carb difference between yams and sweet potatoes carb wise, good luck knowing which is which)

A lower carb way to do this could be to dice up some fresh pumpkin in place of part or all of the yams.

I thouht it looked wonderful too. You could use winter squash (acorn, butternut) instead of the sweet potato -- you can buy them already peeled and cut at Whole Foods.

The recipe as is is only 9 net carbs -- that would be doable post-induction. And the bacon -- the delectable, forbidden bacon -- makes the recipe illegal in just about any other food plan!

This a great idea plus it keeps with the "Autumn" theme.
