Default Middle Eastern Tabouleh Salad

Though this low-carb version is not quite as good as the original version of this Middle Eastern classic bulgher wheat salad, it is better than no tabouleh at all, non? If your diet allows, this is great with a low-carb bread like this: http://low-carb-news.blogspot.com/2...a-bread-gf.html

INGREDIENTS:

1 ½ c. coarsely chopped parsley (This is usually a whole bunch)
¼ c. coarsely chopped fresh mint
1 finely minced green onion
1 c. grated/riced raw cauliflower
2 seeded plum tomatoes, chopped
1 T. fresh lemon juice
½ clove minced garlic
4 T. extra virgin olive oi
pinch salt and black pepper

DIRECTIONS: Grate or process cauliflower to tiny grains and place in mixing bowl. Seed and chop tomatoes. Add all remaining ingredients and stir. Can serve at room temperature or chill.

NUTRITIONAL INFO: Makes 4 servings, each with:

147 calories
13.85 g fat
5.73 g carbs
2.48 g fiber
3.25 NET CARBS
1.9 g protein
27 mg sodium

I actually love it spooned on top of Hummus, literally eaten together.

Oh yeah! I love hummus too. Chickpeas actually are fairly low carb for a bean, but cauliflower hummus sounds good too! I guess hummus made with eggplant is basically babaganoosh, right?

Oh, you are my hero! The salad is amazing. I doubled the recipe, glad I did because I can't get enough of it.

I haven't tried the hummus yet, but I read your warning about the leftovers... That makes me sad. Cauliflower does outgas something awful.

Oh, I'm tickled pink you liked it, Nancy! I miss the taste of the grain in the traditional version has, but the bit of cauliflower sub here I think DOES help with the psychological/visual need for more than just the herbs (for me at least). Visuals are important for me. Happy Middle Eastern cooking to you!

Well that sounds like a lot more fun than cleaning. LOL
I have to admit I spend way too much time going to low-carb recipe sites printing off recipes as well. If ya like to cook, ya like to try other folks' recipes.
