Default Bacon Wrapped Stuffed Jalapenos

These are so easy to make and yummy.

Take as many jalapenos as you want and slice them lengthwise. Clean out the membrane and seeds and stuff with cream cheese. Wrap in bacon and stick it with a toothpick to hold it closed.

Bake at 375 for 20 - 25 minutes.

We love those here in Texas, too! I've seen, but not tried, a variation in which you chop the bacon and cook it almost all the way. Then you stuff the jalapeno with the cream cheese, dunk it in the chopped bacon so that it sticks to the cheese, and then cook. I may try that out. Maybe mix a little extra fully cooked bacon in with the cream cheese too.

I've made those, and added cooked hot sausage to the cream cheese. SO GOOD

I'm bumping this because it's Superbowl weekend, and because there is a variation on the theme. Grilling them

We mix Monterey Jack cheese with the cream cheese.
When you scoop out the seeds, keep just enough aside to mix into the cheese to give the poppers some heat.
Place them on a tray in the freezer for 30 minutes. This largely avoids the need for toothpicks.
Set them on a grille at low heat (or indirect heat if using charcoal) to allow the bacon to crisp without too much flare up, while cooking the pepper.

If you'd like to add just a little more crispness to the bacon, a few seconds under a broiler works too.
