Sodium can cause bloating in any person so if you're bloated and retaining water, then reducing your sodium intake will help. But that applies to everybody, not just PCOS women.
The only reason I can think of that cutting sodium would help PCOS women is that we tend to be highly prone to high blood pressure. If you're blood pressure is normal then it's probably okay, but it's something you might want to keep an eye on in case it skyrockets.
