Default Pancakes W/Strawberry Preserves

These pancakes were awsome!! and oh , so light and fluffy. the first recipe i tried was like round scrambled eggs. the second one i tried was like little soy flavored saucers, but these my friends (with a little Smuckers sugar free strawberry preserves smathered on top) were delicious!

They are made with Bob's Red Mill Low-Carb Baking Mix
which I found in my local store while picking up more Almond flour. This bake mix was half the price of Atkins bake mix.So.........here goes I hope you all enjoy !

Ingredients:

1 Cup Low-Carb Baking Mix

1 Tbsp Canola Oil

2 Eggs

3/4 Cup Milk or Cream

1/2 tsp Baking Powder

1 packet of your favorite low carb sweetener

1/2 tsp Vanilla

Heat griddle to 350 degrees Fahrenheit. Lightly coat griddle with spray oil. In a mixing bowl combine dry ingredients (Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of the dry ingredients and add the eggs, milk or cream, and vanilla. Mix with a fork or whisk until blended, approximately one minute. Pour batter onto heated, seasoned griddle. Cook until bubbles form on raw side. Flip and continue to cook until steam stops rising from pancake. Approximately 1 minute per side.

Serve warm with your favorite butter and "lite" syrup.

Serving size: 1.5 ounces; 1 pancake (43g)

calories 80, calories from fat 35, total fat 3.5g, saturated fat 0.5g, cholesterol 45mg, sodium 95mg, total carbohydrate 6g, dietary fiber 2g, sugars 1g, protein 8g.


Add the Smuckers sugar Free strawberry preserves if you want to take it to the next level

I just found some Red Mill I am going to make low-carb chicken 'n dumplings Tennessee style. Ill also try the pancakes-- I was thinking of adding some buckwheat, but its too high in carbs for OWL.

Canola is not a very healthy oil, ill try butter or coconut oil (my favorite).
