Default Crunchy Green Beans (Missing french fries?)

I put the salt in the baggie, too, and shake it on. Roast in a 425 degrees F oven for about 25-30 min. Halfway through the cooking time, turn the green beans. You want the beans lightly brown and crunchy; some will even get quite dark, but don't burn them. They may look ugly, but they'll taste good.

Some people also season them with onion salt or garlic. And, it make take some test tasting to get the crunch just right. I originally learned about these from a long thread on the forum at Dr. Bernstein's Normal Sugars website, but I believe there is also a thread about them somewhere on this forum.

CarolynC initially posted this in the diabetes forum and I just wanted to make sure I didn't lose track of it! All credit to her!

I just made a batch. About a pound of green beans and they've disappeared. They didn't come out crispy but wow, they sure tasted good. I probably need to let them bake just a bit longer. I was a little afraid they would burn.

Sounds like everyone loved them. I'm going to the market this week to get some beans and try them... Did you use fresh or frozen?

I used frozen.

I thought they were 'okay'. My husband however devoured them. I'll probably make them again. Mine were pretty cruchy and had turned dark/black. The black didn't hurt them at all

Made these an hour ago I thought that the people saying they were good were mostly being optimistic dieters, "it's awesome in comparison to the rest" sort of thing.

But man! These are GOOD! They were sweetish (kinda like onions get sweeter when cooked), a little crunchy with a soft inside, and a little nutty. My dad tried them and he just kept popping them into his mouth That's like a major pass in my home. He even said we'll only make them this way from now on instead of the only way he ever makes them, i.e. boiled.

I give it an A+.

Mine never get extremely crunchy, but they can get crunchy under the right conditions. I think fresh green beans turn out better than frozen and I like to really drench them in olive oil. I can eat two whole cookie sheets of green beans all by myself, especially if I dip them in Heinz One Carb ketchup. Sometimes I make a cookie sheet of green beans and I eat them so fast that I immediately make another.

And, I have no idea how to get green beans to curl like curly fries.

Also, you can roast other vegetables like this. I think roasted asparagus spears are particularly good. When it's available, I'll buy fresh asparagus spears that have been discounted because they don't look so good. These are going to swivel up and turn brown when roasted, so it doesn't matter what they look like to start with.

I gave this recipe to a non-low carb friend recently and her 3 year old grandson loves them. My friend sprays her with olive oil cooking spray.

*de-lurks*

I fry up frozen green beans in unrefined coconut oil, and add in some almonds about halfway through the cooking process. Delicious!

If you set the burner between "low" and "medium", the splatter is minimized.

Oh my goodness they are delicious!!!! Living in Britain I was a bit concerned that our beans (Runner Bean) might be different and not as good. They were lovely. Really felt as though I was having a NORMAL snack. Wish I has cooked double, can understand CarlolynC making another batch immediately.
