Almond Flax Muffins
I made some variations on the Flax Bread recipe in LC Gourmet. I used the golden flaxseed meal and cranberries, and butter in place of the oil, and made min-muffins. They came out very moist, fragrant and lighter colored than using the brown flaxseed meal. (In fact, they look like the Tim Horton's muffin I recently saw in a TV commercial .)
Also, because I'm on maintenance, I added a whole cup of roughly chopped almonds. Yummy in the extreme!
I freeze the mini-muffins and reheat one for 30 seconds in the microwave for part of my breakfast.
Any other variations out there?
