Beer Braised Cabbage
Beer Braised Cabbage

This recipe was originally Emeril Lagasse's "Turbodog Braised Cabbage". I simply use light beer instead of the Abita Turbodog to cut the carbs. Turbodog beer is made by the Abita Brewing Company and is a New Orleans local favorite. If you can ever get your hands on some Turbodog beer, I highly recommend you try it out with this dish. (If you are celebrating a goal of coarse )
Ingredients: 1/2 pound bacon, chopped 1/2 inch peices 2 cups thinly sliced onions Freshly ground black pepper 1/4 cup Creole mustard 1/2 head white cabbage, shredded (about 1 1/2 pounds) 2 teaspoons chopped garlic 1 (12) ounce light beer 1/4 cup heavy cream
Directions: In a large skillet over medium heat, render the bacon until crispy. Add the onions. Season with pepper. Sauté until the onions are soft, about 4 minutes. Add the mustard and cabbage. Season with salt and pepper. Sauté for 3 minutes. Add the garlic, and beer, cover and cook for 10 minutes, stirring occasionally. Mix in the heavy cream, and let reduce uncovered for 10 minutes or until cream has thickened.
