Default Super Quick & Easy Fish Soup

I bought a couple of those frozen bags of little scallops...Albertson's has them $10 for a dollar sometimes.

I rinsed those, put them in a saucepan with a quarter c. of buttter; chopped 5 small tilapia filets in maybe 1" pieces, and threw them in. I had some frozen 51-ct shrimp & added about 10, cut in half. Sprinkled with generously with parsley and a little cayenne, covered a cooked on low til the tilapia was done.

I stacked up fresh spinach leaves, and using scissors, I cut them in strips and let them fall right into the pan until there were enough to my liking. Pushed them under the liquid and let them wilt. Done. The whole process took maybe 10 minutes.

This was enough to feed 3 adults as a main dish.

You could add cooked rice for family members who are not lowcarbing, or serve with a baguette.
