These are fantastic. A quicker way to do it is instead of wrapping in raw bacon, you can roll the cream cheese filled side in store bought bacon pieces (already cooked and crumbled) and then bake. I think they are just as yummy this way and you don't have to wait for the bacon to cook.
That's an intersting idea. Too bad I never have any left over bacon, because that would be a great way to use it!
We had a bake sell at work to help support one of our coworkers who was diagnosed with cancer. The only sugar free item there was some jalapeno poppers made just like this. Unfortunetly the sell went auction style, and I was outbid from the start. I was allowed to try one though from the person who bought the plate full.
I went out and bought myself some medical supply gloves, jalapenos, and have the cream cheese and bacon on hand. Now all I need is some time to actually be able to cook them.
And yet another slight variation. I nuke the bacon because I like mine well done and crispy, then crumble it, mix it with the cream cheese, and stuff the seeded pepper before popping them in the oven. Voila!
Love those cream cheese stuffed Jalapenos. Been making them for years! Here is an additional tip...in addition to a foil wrapped pan, place them on a cooling wrack on top of the pan so that they do not sit in the fat and air flow can crisp all around. I put them on a gas grill for 45 minutes and walk away.
