Default Daily Menu Thread - Sunday June 6th

Okay I was waiting for Alto to post this....but I think Alto ran away from home! j/k

Breakfast:
beef pattie, cheddar cheese, jalapenos, mayo and lettuce

Lunch:
tuna salad on top of a bed of lettuce

Dinner:
roasted chicken
green beans with butter and garlic

Okay, here is my menu from Jan 5, straight out of my Journal!

Brunch:
2 Egg omlette with Brocolli & Cheddar
2 strips Bacon
Decaf Tea with heavy Cream

Snack:
1 oz Macadamia nuts
Decaf Tea with heavy Cream

Dinner:
3.5 oz Roast Beast
4 cups Spinach fried in 1 Tbsp Garlic Butter

Snack:
2.5 oz Swiss Cheese
1 cup s/f jello

Snack:
1 oz Macadamia nuts

Calories Eaten Today
Total: ~ 1792~ ~
Fat: 149~ 1345~ 75%
Carbs: 25~ 56~ 3%
Protein: 96~ 383~ 21%

Was a short day because I slept in really late and went to bed early!

Alto's probably too busy chasing runaway veggies around the kitchen, trying to coax them into her frying pan.

Breakfast - 1 mini crustless quiche, 3 zucchini latkes

Lunch - canned tuna on baby spinach with dollops of mayo

Dinner - ?????YIKES???? We've been invited to neighbour's for dinner. We don't know them all that well. I have no idea what will be on the menu. I'll eat before I go, and if it is no-no food will politely pick around the carbs and just tell her I have food sensitivities.

*back after a great dinner to report in*
Dinner - grilled trout fillet, broccoli with melted swiss cheese, ceasar salad. The host looked a little odd at me when I passed the bowls of rice, carrots and corn right on by, so I just winked at him. The trout was excellent, a President's Choice smoked spicy trout. Just warm in the oven for 18 minutes. Will try to pick some up tomorrow to read the label on the box. There's probably a few carbs per serving, but it was the best fish I've had in a while.

OK! Here goes...for Sunday:
For Brunch:
1 Slice of crustless crabmeat spinach quiche(recipe follows)
2 cups coffee w/heavy cream
1 cup turkey soup

Afternoon snack
Tuna and mayo

Dinner:
Grilled Sirloin steak
sauteed mushrooms
tossed salad w/vinaigrette

SF jello

I morphed a few quiche recipes together and came up with this:
Defrost a 1 lb bag of frozen spinach. Take 2 cups of spinach and saute 2 T chopped onions in 2T butter for 5 mins.



In a bowl, scramble 5 eggs and 1 cup heavy cream

Add spinach mixture to eggs and combine, pour into a quiche or any baking dish that's been sprayed with Pam so it doesn't stick.

Sprinkle with 8 oz crabmeat on top-mush it down into egg mixture with spoon.
Bake at 350 45mins

You could add 1/2-1 cup shredded cheese (Swiss or whatever you like) but I omit cheese cuz boyfriend hates it!!!

Without the cheese-here are the TOTAL nut. values as per fitday.com:

Fat: 126 gms 1130 cal
Carbs: 23 gms 55 cal
Fibre: 9 gms 0
Protein 99 gms 398 cal

Nope! I'm here. Sunday is telephone-friends-overseas day for me. Thanks for starting the thread, 'Cat.

Breakfast:

4 sausage patties.

Lunch:

3 chicken legs

Snack:

salami, cheese (about 4 thin slices salami, 1 oz cheese)

Dinner will be:

2 hamburger patties, bag of spinach, butter


Not imaginative, I'm afraid. I like reading others' more than posting mine
