I have recently made the most glorious cauliflower cheese by cooking the cauliflower and then mixing it with mascapone cheese. Then bake it for around 15 mins with grated cheese on top. Or you can just grill it. I made a whole cauli with 250 g mascapone and then divided it into 4, around 5 - 9 carbs per serving depending upon the amount of cauli used.

Hi Anne

Thankyou so much, i'm going to give it a try for tomorrow's dinner with some lovely pork chops that i have got.

I have been eating a lot of cauliflower, as this is my second favourite veg, carrot being my first (just typical it's high carb lol).
I've been eating it prepared like potato salad and though it is nice especially with some boiled eggs in it, i am getting very fed up with it.

I had surfed around the sites for a LC cauliflower cheese but was unsucessful, i was being to think i was the only person that liked it. I find it goes very well with meat and before the days of LC i always used to make some to go with the Sunday roast.

To make my cauliflower cheese, cook cauli for 5 mins in boiling water, transfer to oven proof dish. Pour over some thick cream and top with grated cheese. Cook for 15-20 mins in oven. Yum!

Yum that sounds nice.
I haven't tried Annes recipe yet, due to my lack of appetite.
But i am going to give both of the recipes a try.
