Hi and welcome. I'm with Meme on sticking with simplicity... unless you have a lot of time on your hands and you love cooking. When I'm laid off work, I'll do more recipe cooking, but during the work week, I stick with easy-to-prepare items like meats from the freezer on the George Foreman grill, microwaveable frozen veggies, or leftover soups/casseroles/chili nuked from the freezer. Rather than focus on recipes, learn to cook your favorite basics well - roasted chicken, steak, eggs, soups. Then, those cooking techniques allow you to improvise when you're in a hurry, don't have much to choose from in your kitchen, or just don't feel like making a recipe.
Re your weight loss: remember, the scale is NOT a fat-meter. It is also not an indicator of whether or not you did well or poorly the day before. Scale weight can vary from day to day by 5 lbs or more even if you aren't trying to lose weight. Take it with a grain of salt.
