Default Would love to hear some Volumetrics recipes (tried one, love it)

Volumetrics is the eating plan designed by nutritionist Barbara Rolls. While the idea sounds awfully basic... eat foods with lots of volume to feel full.. I really love her execution of the idea. I have the book which has tons of recipes that all sounded really good. Plenty are low-carb friendly or adaptable.

In particular I've tried the tuna salad, which involves adding a bunch of tomatoes, onion, spinach, olives and white beans, along w/a little moisture and olive oil, to a can o' tuna. Plus some mustard, garlic, etc. It made a humongous and really tasty salad and I'll probably never go back to regular old tuna salad again.

Anyone else tried her recipes? What did you like? (Or what sounds like a similar dish w/lot of volume but not a lot of carbs.. or for that matter.. cals.. if you watch both?)
