Cleo, I have even ranted, somewhere, about how I felt cauli really had the potential to be way more used in awesome LC food than it is.

If the cauli pizza crust / breadsticks on your blog turn out to taste even remotely like pizza crust and breadsticks, rather than cauli, I might have to offer my services to you in eternal gratitude.

Some people can't taste a difference but I can't choke down a rev roll. Honestly, these are much better.

I'm starting to wonder which has more uses, duct tape or oopsie rolls. Maybe we should ask Dave Berry.

I thought you'd appreciate the pink and the font LOL.

In order to make your oopsie rolls I have to get the coating off my new copper bowl to beat the eggs in. In order to do that I have to make room in the sink, on the stove, on the counter, of my very small crowded kitchen which is currently an utter disaster. (My housekeeper's had the flu for two weeks and while I did like 16 loads of laundry and other sundry things to catch up, apparently I can't keep up.) In order to make room in those places, I would need to do the dishes. In order to do the dishes, I would need to drag in the folding table to put a few on before drying and putting away, as there is zero room on the counter. (My kingdom for some freakin counter space.) In order to drag the table in, I first need to do a major go-through of stuff all over to pick up all trash and containers and boxes. In short, Cleo, your Oopsie rolls require approximately 7.25 hours to make here. This is why I still have not done so.

Despite that the thought of an herbed-oopsie (sounds like "Urb Doopsie" when said fast lol) with a big ol' spoonful of pesto chopped chicken with red peppers and parmesan on top, a few minutes in the toaster oven to melt a little shredded mozz with the parm on top, nearly makes me SWOON. If I could eat bagels, that might be what I was living on.

Tonight we're having one of my favorite meals, albeit it's from a jar.

4-5 chicken breasts, cut up into chunks
1 jar "4-cheese Alfredo"
lotsa herbs and black pepper (and for me, red pepper flakes)
mix it up, stick it in the oven on 350 for about an hour
sprinkle parm on top if you want it to make a little crust
I make it in these oversized ramikens that divide that amount in half
It's ridiculously good.
If you eat half of all that it's about 12 carbs and 8 protein + the protein in half the chicken. But you could eat less and still be happy.
I can HARDLY WAIT until my garden reaches harvest and I have tonsssss of hot peppers for my pesto and alfredo chicken dishes!

Hey, I have a toastez spread that is divine. I bet it would work on an oopsie roll. Shred colby-jack on the 'fine' shred. Mince/grate a couple garlic cloves. Add just enough mayo to make the garlic/cheese into a spread (slightly less thick than 'sculptor' material). It's just a garlic-cheese spread but it's really ridiculously good. Better if you (a) let it sit awhile to blend, (b) put it on something warm/hot so it warms a bit, (c) you can put sliced boiled eggs and thin sliced sweet peppers on top and it's more awesome.
