Default Karen, Spelt?

Hi karen,

before starting atkins I had cut back on wheat and was using spelt flours which I enjoy much more that soy flours..but now that I am doing atkins can I replace soy flour with spelt flour?

I have heard that spelt is lower carb than wheat, but is is low enough to use in bake mixes? any help would be great. I am not eating stuff with bake mixes yet, but am looking forward to them

Hi Natasha,

From the info I have, spelt flour has a very similar carb count to wheat flour. And both have roughly twice the carbs of soy flour.

According to www.dietclub.com.au white spelt flour has 72.2g/100g and wholemeal has 60.1g.

Soy flour has around 30g carbs/100g.

Many low carbers use ground almonds for baking. Have a look through our recipes for some that use ground almonds (aka almond meal or almond flour).

“More Splendid Low Carbing” by Jennifer Eloff - This author uses spelt flour in some of her bake mixes and then uses those bake mixes in lots of her recipes. I believe she has at least 2 cookbooks out. Mischa posted a recipe in her journal for Jennifer's Cinnamon Kuchen a while back, as well as the bake mix recipe used in it. You may want to search for it.
