Default My new favorite ingredient!

I found this stuff at my local grocery store and threw it in my cart; not sure at the time how I was going to use it.

Brooklyn Creamery Double Thick Cream. Www.bkcreamery.com

It's heavy cream that is naturally thickened with a seaweed extract. They also get the cream from smaller dairies and never allow Rbst.

I have been taking a couple tablespoons, mixing in some cocoa powder and couple drops of liquid stevia. Yummy chocolate mousse.

You can use it for thicker cream sauces and a whole bunch of other things.

I just finished my last tub and I have to get some more tomorrow. High in fat, low in carb. So delicious! Enjoy!



P.S: Hope this isn't old news, I'm fairly new here and learning the ropes...

Sounds good, not something I would put in my coffee, but it might be great to thicken up sauces. I do miss my roux based sauces. au jou just doesn't usually "do it for me".

It would be great for that because it already has enough "body" for that. Enjoy!

There are sources of double cream that do not contain carrageenan or anti-microbials such as nisin. Even though carrageenan is derived from Irish Moss, the chemicals used in the processing make carrageenan a less-than-ideal food thickener.

Homestead Creamery hwc has a high fat content, and is low-heat pasteurized, not ultra-pasteurized.

Some shops carry Clotted Cream from England.

Or one can make creme fraiche with a little buttermilk and hwc, or use hwc to make
gelatin cream (panna cotta) in savory or sweet versions, or even plain, which can be used as a base for various dishes.

Look for Xanthan Gum -- Bob's Red Mill section of the supermarket has it. Guar gum also works, I've used in the past but for some reason prefer the above.

Sounds good, though that product hasn't made it South that I have seen. Like their website, though it made me crave dairy
Trader Joe's now has their own Creme Fraiche as an alternative. If you add stevia and chocolate, regular sour cream works well too as an instant high fat "mousse" snack. Some brands of sour cream really aren't very sour.
