There are sources of double cream that do not contain carrageenan or anti-microbials such as nisin. Even though carrageenan is derived from Irish Moss, the chemicals used in the processing make carrageenan a less-than-ideal food thickener.
Homestead Creamery hwc has a high fat content, and is low-heat pasteurized, not ultra-pasteurized.
Some shops carry Clotted Cream from England.
Or one can make creme fraiche with a little buttermilk and hwc, or use hwc to make
gelatin cream (panna cotta) in savory or sweet versions, or even plain, which can be used as a base for various dishes.
