It's fridge cleanout day... I think I'm going to go make some veggie "soup" i seem to have lots of veggies that I overbought last week, and they need used, today. And it is cool and rainy, perfect day to make up a batch of soup.

This is the plan. Not sure how strictly I'll adhere to it, though. It's a rainy day (thanks Ernesto!) - just made for soup and I'm really low on veggies.

B - "scoop" of mexican frittata (leftover cooked lean ground beef, diced tomatoes, handful of sliced black olives, and some crumbled ff cheedar cheese)
sf mocha coffee
L - grilled turkey w/ salad greens, grape tomatoes, and lf cottage cheese
homemade vinaigrette
bottled water
S - 15 almonds
sf mocha coffee
1/2 c. skim milk w/ meds (I keep forgetting to put this in my food journal.)
D - grilled sesame chicken
green beans
sf pink lemonade
S - edamame

It is rainy and chilly here today too...nothing to do with Ernesto. So today is my first real "TEST". I LOVE to bake when it is like this. In the summer it isn't even a temptation to turn the oven on. BUT...I just made a batch of lowcarb zucchini bread. It smells really yummy baking right now. I am looking for a "low carb oatmeal cookie" recipe right now. I want to bake some of those (if I find a recipe) and freeze them. I feel like I am "depriving" my son... we never have "cookies and such" around, not that he needs them, or lots of them. But they sure would make the house smell yummy!

If you find one, I'd love to see it! My son has been begging for cookies and I hate buying the uber-processed version by Keebler or the giant oat/rais. cookies from Jimmy John's. We used to make oatmeal chocolate chip cookies from a pre-made mix. Replacing that little treat would be a nice treat for my son.
