Here is my moderate carb day today. I already ate breakfast and lunch and the dinner/dessert is planned.

breakfast:
water with lemon
coffee with half and half
1/2 cup steel cut oats with 1 T peanut butter

lunch:
seared garam masala coated mahi mahi fillet cooked in olive oil
raw baby carrots
steamed broccoli with butter
3 small fresh figs

If I get hungry midafternoon I'll have some nuts.

dinner:
lamb chops
asparagus
eggplant

dessert:
watermelon chunks

Nothing milk-like on it? I've never tried oats without milk.

Too tired to get in the kitchen and cook a full meal. Something quick and easy is on the menu tonight. I'm thinking whatever leftover meats I've got in the fridge that seem appealing to J and the kids and maybe I will make a small eggplant parm w/ a side salad.

Nope, just oats and PB. I'm not big on dairy. The PB makes it creamy.

Today was homemade pizza (portabella mushrooms for the crust, tomato/roasted red pepper sauce, low fat mozzarella and canadian bacon -- for the kids sub whole wheat crust for the mushrooms), boiled cauliflower (cause I needed a veggie the kids would eat), and an orange pepper and a zucchini brushed with Newman's Own Family Recipe Italian dressing and grilled. The kids had canteloupe instead of the grilled veggies.
