I made these awhile ago a couple of times and thought they were worthy of their own thread!
To start:
Empty a package of chicken wings on a baking sheet and season with salt and pepper. Bake at 400 degrees until fully cooked with crispy skin.
In a small saucepan on med-high heat add:
2 tbsp. of oil (I used olive oil)
crushed chili flakes to taste (I used about a teaspoon and a half)
1/2 tsp. crushed or minced garlic.
a splash of hot sauce (optional)
Heat until the aromas are wafting around...(don't burn the garlic!)then turn the heat down to very low...
Add 1 heaping Tbsp. of Peanut butter
a splash of heavy cream (I suppose coconut milk would be good too!)
salt to taste
Stir until mixed...it will be quite thick...you can add more oil or cream if it gets too thick. Remove from heat.
Put the baked wings in a bowl...pour the sauce overtop and mix until the wings are coated.
Serve with coconut flakes sprinkled generously on top and some finely chopped cilantro. (optional)
These are YUMMY and the sauce can be spread a long way!
