salad of romaine, arugula, cucumber, celery with a blue cheese yogurt dressing. 1/4 slice of my cauliflower crust Italian sausage "pie", about 5 oz. baked chicken, 1/6th slice of Italian sponge cake with a single serve ice cream. 1 oz. half and half with my coffee.

Dinner last night was shrimp, LC cocktail sauce, and a couple of spoonfuls of Bitchin' sauce. Yum!

Bowl of Greek yogurt, layer of blackberries, and chopped walnuts.

I found out that if unopened Greek Yogurt stays in the fridge long enough, it gets even thicker

I've been doing variations of this salad posted by Werebear (thank you!) in March, pg 78 of this thread...
"Spinach salad with a layer of fresh mozzarella, extra bacon, and covered with pesto mayo."
I added a hard cooked egg and made a dressing with sour cream mixed in with mayo/pesto. I used half spring mix dressing and half spinach. Soooo good.

24-Hour Layered Salad - I will add bacon to it and call it dinner. It turned out well. Salads are fast and easy right now - we are in the 90s so they also appeal from the no heating up the kitchen aspect...

Dinner was good, I call it "The Nasty" cause it looks nasty. Used up some left over peppers and onions that the easter Rabbit couldn't finish. Same thing I have almost every day lately with sliced cucumbers on the side. Protein was 1 boned chicken thigh and 2 eggs and whatever god put in the other stuff. The noodles were MAN MADE tho Tofu-Shirataki - We'll I guess all the stuff there is man made, with out a man or woman there would have been no food for my bowl. Thank You Man Made Food!

I baked some skinless chicken breast (it was on sale). I just coated them with olive oil, Cajun spice and lots of paprika. It came out pretty nicely. Broccoli and cauli on the side, with butter and bacon bits.

Before chain restaurants had nutritional info, I LOVED ordering Asian inspired salads, not realizing what sugar bombs they are.

Tonight I am going for a LC version-
Romaine, chopped bell pepper, edamame, rottiserie chicken, mandarin oranges (packed in water), and a dressing of soy sauce/unsweetened rice vinegar/toasted sesame oil and a touch of Splenda.
So altogther it is 17.5 carbs, plus 6g fiber. It's a touch high, but you could make it lower by using a fresh orange or using less of the oranges. I calculated using the whole container (a single serving).

pan-fried ground beef patty with a blob of sugar-free ketchup (laced with chipotle hot sauce)
sliced mushrooms, green & red pepper strips sautéed in the beef drippings

Last night my blood sugar definitely stayed higher than usual, after the mandarin orange experiment. Will have to see what happens next time, before I give up on them or reduce quantity.....I can be high for MANY reasons, so it is too soon to tell.

The Chinese chicken salad was very good though!

Tonight is another similarly reinvented old high carb favorite- luau salad
Mixed greens
Chopped yellow pepper
Kiwi (half a kiwi is only 4.5 carbs plus 1g fiber, so fingers crossed my blood sugar behaves)
Rotisserie chicken
Toasted coconut flakes
Ginger dressing

15.5 net carbs, plus 5.5g fiber
Even with the kiwi, this puts me basically at my usual goal for dinner which is under 15
