Default Linda's lunchbox

I am so excited to start a new thread, my first one ever! I am going to post new low carb recipes here and include photos. I am an amateur photographer and I love baking. Too bad those jobs don't pay! Anywho....I am Linda and I am a registered nurse. I have battled my weight most of my life. I just love to eat! So I am going to put my cooking skills to work here and invite, or challenge, anyone else to do the same. Post away!!!

Ok, here is my grilled chicken with bbq peanut butter sauce. I used bonless/skinless chicken breasts. Rinse them, pat dry. Then I coated them with olive oil and placed on grill. Baste them with the sauce. Haven't tried them yet, but don't they look good?

Sauce recipe:

1 cup Apple Cider Vinegar (you can use white wine vinegar but I like more zip!)
4 T. Lemon Juice (I used the bottled stuff, no fresh lemons on hand)
1 T. Butter
2 T. chili powder
1 T. creamy style peanut butter (as low carb as you can find)
1 t. celery salt
2 t. ground black pepper

Mix all in a sauce pan on the stove and heat until the butters are melted. Make sure you baste your chicken often!

I save my pics to photobucket and then when posting I click that mountain shaped thing and attach an image. The code is at photobucket, that's the way I know to do it.

Making something tonight. Will take pics.

Peanut butter on chicken huh. Will have to try that!

Hi Linda, as you can see, I have moved your thread to the spot where it belongs and renamed it.
Fabulous looking recipe, by the way, - thank you so much for posting it!

I just want to explain to you the way our recipe forums are set up. If a bunch of your, or others', recipes are just put in one thread, they will just wind up getting lost. You see, we have set the recipes up in categories, and eventually all recipes are linked to the "Contents" sticky at the top of each separate subforum. That way if anyone is looking for a particular recipe they can find it fairly easily.

Thanks again, and I look forward to more of your recipes.

So I guess you can't have a food thread for sharing recipes. It was a neat idea. Maybe it could be in another section, like a challenge?

Yes, you could still have a recipe sharing thread, but if they are new recipes, my request would be that you would still post the originals in the actual recipe forums, and just post links to them in the recipe sharing thread. The Buddies, Challenges section would be good, although Kitchen Talk would work too.

Kitchen Talk would be good. Can you move this there and IAmGeorge can rename this thread and also post the recipe in the foods section? We can post each recipe there. We'll still share pictures here too though. Will that work?

I like the idea of a thread where we all talk about what we are trying in the kitchen. I thought it was a good idea to have that as a goal to try a new recipe each week. I don't care where it is, but I'm really supportive of the idea (and will do my best to participate!)
