Default Coconut Shrimp

I love coconut shrimp -- but it is a very unhealthy dish (breading, added sugar, trans fats, etc.), so I came up with this recipe. It's really very tasty and is super-easy to prepare!

Coconut Shrimp

1 pound shrimp
2 ounces dried coconut flakes, rehydrated
1/4 cup sugar-free orange marmalade
coconut oil

Note 1: I use pre-cooked shrimp with the tail-shells on -- thaw, remove the shells, then squeeze the water out.

Note 2: You can increase the orange marmalade, but be careful of making this dish too sweet.

Note 3: I imagine butter would taste good too.

Preparation: Thaw shrimp and remove shells; squeeze all the water out. Saute the shrimp in coconut oil -- a lot of liquid results. Reduce this liquid, then add the orange marmalade to the liquid and stir in well (do this by tipping the frying pan, no need to remove the shrimp). Stir shrimp into this liquid, then add the coconut and stir well.

Serve.

I made these last night, BKM. Thank you very much for sharing this with us! I already had Smucker's sugar free orange marmalade and did not have any dry coconut. I used coconut extract and the shrimp were delicious. I bet the extract reduced the carb count, but I can only imagine how good real coconut would have been! Thanks, again.

BTW, served the shrimp with steak from the grill prepared using a recipe from Cuisine magazine. I'll post the details within the next few days. It's a preparation method that completely eliminates any desire to add a steak sauce and uses olive oil, fresh rosmary, sage, and garlic. Surf and turf -- oh yeah!

I made deep fried coconut shrimp and they were great. I was very surprised to see how LC unsweetened coconut is - (lots of fibre) - i.e. 10 grams net carbs for the entire bag....I used maybe 2 grams carbs worth.

I dipped fresh shrimp in an egg mixed with cream and dipped in the coconut. They were heaven and less than 1 gram of carbs per serving.

Next time I will come up with an interesting LC dip. Any suggestions??

I had coconut mahi-mahi just a few evenings ago -- mahi mahi cut into finger strips, then battered and rolled in coconut then deep fried -- really, really good. I plan to buy some mahi mahi and work out a low-carb version (this had been a planned indulgence) -- I think I liked it even better than the shrimp. I think that likely any solid white fish would work, -- just so long as the fish doesn't break too easily.....

And as far as a dip goes, sugar-free jams work quite well, and you really need very little to get the taste. Perhaps adding a bit more (mashed) fruit to the jam, and maybe a bit of sour cream or cream to make it a better consistency????
