DH and I had some errands to run, and we went to Swiss Chalet. We went for the 2-can-dine deal, so I had a chicken breast with veggies (broccoli, cauli, carrots) and about 6 packets of butter.

Ground chicken from the freezer and some cole slaw mix that I forgot about in the fridge and it had just expired... cooked up Chinese style with sesame oil, tamari, chili/garlic sauce, and splenda. Awesome, and we'll probably have the leftovers tonight.

yummy everybody - Kristine - that chinese style dish with ground chicken sounds so good. I may try that when my vegetarian friend is out of town for several days... I won't cook meat here when she's here but do put bacon bits on my salad...

Last night another Fav stuff salad. I am happy with them, they are yummy, fill me up and I sleep great, and have a loss in the AM.

Thanks Kat, it was even better the next day reheated. It's sometimes called "crack slaw", but I've always disliked calling it that.

Last night, I made Thai red curry fish and green beans. Super easy and delicious.

Ha, yes, I don't really like using that term either

Tonight I made Robin120's Shrimp soup that she posted here on pg 94...WOW is that ever good! Robin, you are a genius!!! Fast, simple, easy is my MO for the next chunk of my life. (and I did catch up with this thread - a belated but heartfelt condolence on the loss of your pet...so sorry.)

I haven't been posting much - dinner is usually a salad - I just sleep better when I have a salad for dinner. I eat the same type of salad all week. This week was just romaine, spinach, shrimp, bacon pieces, cheddar, cheese crisps, hard cooked egg and homemade Ranch. They are so good I don't get tired of them.

Oscars dinner: Scallops in butter with bacon pieces, Roasted Broccoli, and a mostly faux Black Russian - a tad of Kahlua in it. YUM!
