Default Coconut-Peanut Butter chicken wings

I made these awhile ago a couple of times and thought they were worthy of their own thread!

To start:
Empty a package of chicken wings on a baking sheet and season with salt and pepper. Bake at 400 degrees until fully cooked with crispy skin.


In a small saucepan on med-high heat add:

2 tbsp. of oil (I used olive oil)
crushed chili flakes to taste (I used about a teaspoon and a half)
1/2 tsp. crushed or minced garlic.
a splash of hot sauce (optional)

Heat until the aromas are wafting around...(don't burn the garlic!)then turn the heat down to very low...

Add 1 heaping Tbsp. of Peanut butter
a splash of heavy cream (I suppose coconut milk would be good too!)
salt to taste

Stir until mixed...it will be quite thick...you can add more oil or cream if it gets too thick. Remove from heat.

Put the baked wings in a bowl...pour the sauce overtop and mix until the wings are coated.

Serve with coconut flakes sprinkled generously on top and some finely chopped cilantro. (optional)


These are YUMMY and the sauce can be spread a long way!

Sounds yummy! Have you figured out carb content
by chance? I'm sure its not much. Was just curious.

LOL! No...I never count my carbs...guess I SHOULD now that I've been stalling....let me try figure it out...

oil = zero
wings = zero
garlic and spices = probably less than a gram
hot sauce = zero
peanut butter = 2-3 grams
cream = 1-2 grams
cilantro/coconut = depends on how much you sprinkle on...probably a gram or two...

I doubt the recipe would go over 6-7 grams....and depending how many wings you cook up, you'd get quite a few servings. I used a pound of wings and had sauce left on my plate.

I just made the sauce for this to use on my grilled Chx wings later tonight, and it's quite yummy. I can see a lot of uses for this sauce! I've always wanted to try to make a peanut sauce, and I'm glad I did. (I did add a few drops of stevia to give it a very faintly sweet undertone.)

Anyway, my question is this:

I decided to try this after I'd seasoned my wings with lemon/pepper (lightly, and only on one side). Do you think it will still taste good? Or should I save the sauce for something else?

Hmmmm....peanut butter and lemon....Might be worth a try!! (I'll eat just about anything)

I made this sauce with chicken tenders last night and extra chilies...I'm wondering if it would be good with pork chops....I see some evenings of "experimentation" ahead of me!

It would also be good with cooked spinach, IMO...

I know that lime would be OK with a Thai taste...not sure about the lemon. Ah, well. I'll try it on one wing first. If it's not good, I'll put it in the fridge for another chicken day!

Oh, man, Sandollar, all I have to say is

THANK YOU for this recipe!

It's delicious and most definitely a keeper! I think I may have found my new favorite wing sauce! (The lemon-pepper taste didn't bother it at all!)

The only modifications I made were:

-added and extra TBL of PB, since my carb allowance would allow it today
-added about 1/2 tsp of ground ginger
-added a few drops of fish sauce
-added a few drops of clear liquid stevia
-didn't use the coconut

Mmmmm...never thought about the ginger...I'll try that next time!

(can't bing myself to buy fish sauce....*shudder*...oh, I know it's delicious...it's just ME.)

Tried it on the pork chops. Also excellent! I really added lots of chilies and the heat just kind of sneaks up on you...

It sounds lovely.
I never thought of the coconut and PB together, it is a great idea. I did try some commercial sauce before LC, with peanut butter and ginger and fish sauce but I found them high on the gag reflex.
So this PB and coconut is very exciting.
