Default Birthday treat?

I was thinking I'd like to make myself some kind of OP birthday treat, I might have splurged on berries (which I don't eat now) and cream, but I am now diary free (which REALLY bums me out). I also think coconut / coconut oil makes my skin break out.

I don't even know how to make fat bombs with my predicament!

Any suggestions?

Thanks!

(Edited - oops, I misread your post )

Have a look at the Baking for paleo-deviants thread for ideas. Not all of it is coconut based. The pumpkin muffins might work, as well as almond flour cookies or muffins.

Can you tolerate clarified butter? You could use that in place of coconut oil for most recipes. Lard might work, depending on the recipe.

I bet you could get decent fat bombs if you used solid baking chocolate and either a firm nut butter, or lard. They'd still probably be softer than those made with coconut oil, but it should work.

All of my other ideas have either dairy or coconut. :P

The berry idea is nice - how about melting some chocolate to dip them in?

Hey, here's another idea: Flourless chocolate cake. Single serving to boot.

Looks lovely but a whole cake could be a disaster for me , I'm single and will be having a celebration at a restaurant with 1 other but no big party!

if you can tolerate butter, i would make pb cups (mix melted butter ad pb and spoon into foil muffin liners, then top with melted chocolate. set in freezer, store in fridge.

you could also make meringues....

i second the chocolate dipped berries...or chocolate covered bacon!

avocado chocolate mousse

happy birthday!

Thanks Robin, those PB cups sounds great! I'll have to try them sometime soon.

What chocolate do you buy?

I like lindt or ghiradelli- whatever the store has in darkest. usually it is 80-86%.
Lillian's is also now in organic/ health food aisle at the Giant where i shop- it is sweetened with stevia, and very good!
