Default Cauliflower: how much do you love it??!!

I'm sure this has been posted before, but I've searched through a year of threads and it hasn't come up so...

Cauliflower. Subs for potatoes and rice (I've done deliciously), and popcorn (I've heard).

Anything else? I'd love to hear what you love to do with cauliflower and other fresh ingredients

It's a favorite In our house, too!

Mashed- DH's favorite
Riced- great for paella to Asian stirfry ices or fried rice. Used for a jumbalaya over the weekend
Popcorn- this is basically just super roasted. It tastes great, but doesn't remind me of popcorn, I'd suggest calling it roasted cauli to avoid being disappointed.

A few more ideas: you can purée to use potato soup base. For example, you can make a New England clam chowder. I bet a loaded baked potato soup would be great, but I have only done this technique with clams, so far.

Slice the head all the way through to make long, skinny "steaks" then roast. These make a lovely presentation. I use evoo, sea salt, garlic, and then top with parsley or chives.

It also makes a nice addition to crudités platters. It is sturdy and holds up to dips well.

It makes a great "faux-tato" bacon soup.

I also like it cooked, chilled and turned into salad. You can do mock potato salad, or I like it with 3-cheese ranch and bacon. It looks pretty if you mix it with broccoli and maybe add some purple onions and/or cheese if you can afford the carbs. Nice salad to take to a get-together.

Read that you are a busy student, if you have a Trader Joe's look for both the Fresh and Frozen Riced Cauliflower. Someone on a FB page said that Walmart's now carries it too.
In the winter when fresh caulifower is expensive and looking sad, I buy the bags of frozen at Walmart's to make the mashed recipes (add garlic), also the bags of frozen cauliflower and Broccoli... that makes a pretty pale green base for any recipe.

We adore cauliflower. I use slim palette's recipe for cauliflower tortillas, came up with my twist on using it for flatbread, pizza, there are recipes for cheesy breadsticks with it, cauliflied rice, and a delicious roasted leek and cauliflower soup that tastes like potato soup..yummo. Mock potato salad in summer...big hit with my dh.

Can't live without it.

Patricia, agree with you and DH. Mock potato salad tastes even better than original, the slight crunch, shape and flavor of the veg adds something missing in boring potato cubes.

DietDoctor has 17 recipes using cauliflower now, the Hash Brown recipe was just listed as #5 favorite recipe of the year.
