Thumbs up SWEET AND SOUR CUCUMBER SALAD

Level One
Veggie
Serves 10

6 large cucumbers, peeled, seeded and thinly sliced
2 vidalia or other sweet onions, thinly sliced
1/4 cup splenda or somersweet to sweeten
2 tsp coarse salt
2 tsp dry mustard
2 tsp celery seeds
1/2 cup canola oil
1/2 cup cider vinegar

In a medium bowl, toss together cucumbers and onions. Set aside.
In a small bowl, mix together all dry ingredients and whisk in liquid ingredients until emulsified. Pour vinaigrette over vegetables; toss to coat.
Cover and refrigerate at least 4 hours to let flavors blend. Serve chilled.

Post TOMATO PARMESAN CASSEROLE

Level One
Pro/Fats
Serves 4

1 medium zucchini
1 meduim crook neck (yellow) squash
1 medium red bell pepper
1 medium green bell pepper
1 8oz can tomato sauce (no sugar added)
1/2 cup grated parmesan cheese
2 tbsp minced onion (dehydrated) or 2 diced green onions
1 tbsp dried basil
Salt and pepper to taste

Chop all veggies and place in microwaveable casserole. Pour tomato sauce over the top, then sprinkle evenly with spices, minced onion and parmesan.

Cover container and microwave on high for three minutes or until veggies are softened to your taste (I prefer mine al dente)

If you prefer a crispier, cheesy topping, cover and bake all but the cheese for 20 minutes at 350°F in a preheated oven. Add cheese topping and bake uncovered for ten more minutes.

I do this with all different kinds of veggies and top it with a variety of cheeses. It's very quick and works well with almost any meat entreé.

Ooooh those look good!
This is not an actual recipe but Vegetarian Times magazine has lots and lots of great recipes that are easily Somersizable by just taking out an ingredient and subustituing. And some are good to go just the way that they are!

The ones in the Vegan section are good for carbo meals and there are others that fit in with Pro/Fats.

just a thought!

Default Sweet Red Pepper Broil

Level 1
Pro/Fats
Serves 2

1 large red pepper
2 ounces Mozzarella cheese -- or your choice
Pepper to taste
1 cup fresh mushrooms
1 tablespoon minced onion
1/4 teaspoon minced garlic


-Clean red pepper, cut in half & seed.
-Brush with oil or garlic butter & bake in a 350*F oven for about 15-20 minutes or until fork tender.
-Saute the onions & garlic; add the mushrooms & saute till lightly browned.
-Divide the mushrooms evenly between the 2 halves; top with cheese of choice.
-Season with pepper & place under the broiler until cheese is bubbly.
-Remove from oven & let sit for a minute so the cheese doesn't run out.

-Serve

These all sound good but Abequa, your SWEET RED PEPPER BROIL sounds like an awewsome Saturday lunch.
