Default Stevia....but...but...

Hi, asked this on the atkins thread but it seems to be a ghost town there, not a single reply, so....
I see atkins induction friendly recipes using stevia, yet looking at my pot of it, it's nearly all carbs, so that doesn't equate to me as a low carb food! I'm trying to keep under 20 a day.
So why is stevia included in low carb ideas for sweet foods? I'm assuming it's really a no no?

I'm craving a sweetish something. My very sweet tooth has gone, but a little something on a bad day would go a long way!

Hi, since you have a pot of stevia, I will guess you have a powdered blend of stevia and erythritol used for baking. It is really mostly erythritol and considered safe to use by most low carbers in that it does not raise your blood sugar or insulin, and the carbs not counted.

I don’t bake much but when I do, that is that I use, Swerve or Pyure. I don’t know the brands you have in the UK, but here is a good article on sweeteners from NZ with brands included. https://www.ditchthecarbs.com/low-carb-sweeteners/. This site has some quick and simple cookie/biscuit recipes. I like her recipes because they are not too sweet, you will find your desire for sweetness dials down after a while low carb, and I cut back on the amount of sweeteners in many recipes.

Stevia extract truly is carb free if you wanted to use that, I put the flavored drops in coffee, but it would change the texture of baked goods. The article explains all the pros and cons of a host of products.

Yes, it's a granular spooning sweeter called Truvia, and yes it has erythritol. It's 99g per 100, carbs, all of which are "polyols".
I've low car bed before, and did paleo successfully for 3 or 4 years, not gaining a pound, so I used to bake breads and cookies using honey or maple, or dates as sweeteners, however, since last March I took on the role of full time carer for my mum, which took me away from my own kitchen, my man, my pup, and into a lonely life surrounded by biscuits, cake, pastry, you name it.....2 stone later, I'm trying to get a grip again, and lose the comfort eating! Easier said than done at frustrating times! So sometimes I just want a something!
