Default Home made Sauerkraut

So I see in the atkins book that Sauerkraut is on the list of things that feed yeast, but I assumed that is because most commercial Sauerkrauts are made with vinegar.

When I make Sauerkraut at home all I use is Cabbage and salt and let it sit for 3 weeks. It's supposedly fermented by good bacteria and not yeast or mold so I'm thinking I should be able to eat it.

What do you all think?

My guess is that is is OK. I grew up helping to make sauerkraut, my grandmothers basement always smelled of it.

OK, I was wrong. Page 334 of DANDR says stay away from any yeast or mold containing food, this includes sauerkraut, sorry.

Properly home-made sauerkraut should contain no mold and is one of the best pro-biotic foods available. With only 2g of sugars per 100g, it's safe to eat just for all the benefits of it.

Anecdotal fact: I've been on low-carb for more than a year, been eating sauerkraut as often as twice a week, no negative experiences with it.

I suspect that anything fermented is going to contain yeast. It floats wild through the air, that's how they used to make sourdough, just from the wild yeast.

I know someone did an analysis of the types of critters in kefir and there were several kinds of yeast mentioned.

Yup, and sauerkraut isn't one. It provides your digestive tract with beneficial probiotics that enhance the natural bacterial flora in the gut effectively fighting candida. It is one of not too many natural foods (superfoods) to contain the L. planatarum bacteria that inhibits overgrowth of candida.

And becky7474, my grandmother made her own sauerkraut as well. As much as I respect Dr.Atkins, I'd rather follow my grandparents instinct and continue eating it, which I've been doing without any ill effects on low-carb.

I love it myself and don't have any low carb problems with it. Luckily I don't have any candida problems, so I can't say one way or the other if it is a problem in that area.

I guess once again, your mileage may very.
