Default Low Carb Taco Casserole

Ingredients


2 lb Ground Turkey
2 tbsp Taco Seasoning
1 cup Salsa
16 oz Cottage Cheese
8 oz Cheddar Cheese (shredded)



Instructions


Preheat the oven to 400 degrees
Brown the ground meat and taco seasoning in a fry pan, breaking up the chucks of meat until cooked through.
In a large bowl mix cottage cheese, salsa, and 1 cup of the cheddar cheese. Set aside.
Add the ground meat to the bottom of an 11 x 13 casserole dish and spread evenly. Spread cheese and salsa mix on top of the meat and sprinkle the remaining cheese on top.
Place the casserole dish in the oven and bake for 15 - 20 minutes until cooked through and the cheese is hot and bubbly.

Default Fried Chicken Patties

Ingredients:

1 can (10 ounces) white chunk chicken
1/4 cup Almond Flour
1 egg
salt & pepper
3 tbs butter

Steps:

1. Drain the chicken, place it in a mixing bowl and mash it well.
2. Add the almond flour, egg, salt and pepper to taste and mix well. Form into 4 patties.
3. Melt the butter in a skillet over medium heat. Saute the patties in the butter, turning carefully, until very golden on both sides. This should take about 7-10 minutes for each side. Done!

Yield: 2 servings
