Hi Samina (gorgeous name btw!)
I use almond meal for crumbing chicken and schnitzels. Just combine it in a bowl with whatever seasoning you like (herbs, seasoned salt etc). I also put in a handful of breadcrumbs to help it stay together, but you can leave these out if you want to. In another bowl whisk a few eggs together and season those as well if you want. Coat the bits of chicken or fish or whatever you like in the egg, then press in the almond mixture so they're all coated, then fry up in some nice foamy butter and/or olive oil. I also add in parmesan cheese with the almond meal - makes sensational schnitzels! It will get very messy and you will probably go through a bit of it, depending on how much meat you need to coat. As with alot of low carb cooking, you need to play around with it to get the quantities right for your dish. Hope that helps.
