Whenever mushrooms are on sale, I buy a ton and sautee them with garlic, onions, and seasonings until the excess water cooks off. I freeze 1/2 cup portions in Ziploc bags. Whenever I make the meatloaf, I just quickly defrost the mushroom/onion/garlic mixture in the microwave and mix it in with the second group of ingredients as listed in the recipe.

Also, you don't have to use the meatloaf mix for this. All beef works fine.

Default Sausage/HB/Bacon mini meatloaves

I just made the best! Sausage and bacon meatloaf. I'm guessing it is somewhere around 3 carbs per loaf. It was yummy. Here is the recipe:

1 roll of sausage
1 lb of hamburger meat
1 package bacon (I used low sodium)
1 cup shredded cheese
1/2 sweet bell pepper (orange and yellow) diced into cubes

Preheat oven to 350...mix sausage, hamburger meat, cheese and bell pepper well. Then form into small handful size loafs. Wrap each loaf in one strip bacon. Put onto a foil lined baking sheet. and put into the oven. Bake 30 minutes at 350 degrees. about 1/2 way through I poured a lot of the grease out. Once they are cooked through, I turned on the broiler for 5 minutes, turned the loafs and broiled for 5 more minutes. This made around 16 loaves.

They were done perfectly and it was so yummy.

I think that it is time to make this again. I just bought a $20 package of ground beef at Costco.

It will warm this cold house and make it smell really good too!

What is the JUDD diet? I tried to find it here and couldn't. Curious I am doing Atkins and just was curious. Love the Meatloaf recipe!!

You eat a lot of calories one day, hardly any the next (Up Day, Down Day).

I realize this question is from Jan 2013. However, last time I made the recipe, I made with pork rinds and didn't care for the texture of the rinds. I generally make it without the rinds.

I've made this recipe many times and don't bother with the pork rinds any more, just not needed.

I've put pickles in meatloaf before and it kinda reminded me of a burger ... I bet they'd work in this recipe too!

Default Sicilian Meat Roll

Tonight I'm going to try to convert an old, well-loved recipe to something low-carb. It called for bread crumbs and tomato juice, but I'm going to leave them out and hope for the best.

Here are the altered ingredients:

2 beaten eggs
2 T. snipped parsley
1/2 tsp. oregano
salt and pepper to taste
1 clove minced garlic
2 lb. ground beef
6 oz. thinly sliced ham
1 pckg. sliced mozzarella or muenster cheese

In a bowl, combine the first 5 ingredients. Add ground meat and mix thoroughly. On waxed paper, pat meat mixture to a 10x8" rectangle. Arrange ham slices on top of meat. Reserve one slice of cheese. Tear up remaining cheese and sprinkle over ham. Starting from short end, carefully roll up meat, using paper to lift. Seal edges and ends. Place seam down in a 13x9x2" baking pan. Bake at 350 for 1-1/4 to 1-1/2 hours. Center will be pink due to ham. Garnish with remaining cheese. Return to oven for 2 minutes. Serves 5 to 7.

I used 3/4 cup Parmesan cheese in place of breadcrumbs and it turned out very nicely.
