I agree! Once I learned what foods had how many carbs and learned the right way to cook them, it's been very easy. I still have a problem with eating too much - I'm working on that - but at least I'm not eating wheat & other grains, sugar, fruit, or starchy vegetables which would raise my bg. Which leaves a surprising amount of great foods to eat.
