You may have just needed more of the original dry ingredients. Sometimes I find I need an extra 1/4 cup of almond flour.

That would have done it. It's whole cup full of dry ingredients. I find the coconut adds some nice texture without too much flavor. I think without it would be a little too crumbly, which seems to be what you found. Since almond flour has no gluten, I think the irregular shape of the coconut helps it to stick together better.

Anyone have any ideas where to find unsweetened coconut? I have been to Wal-Mart, Kroger, and Marsh. Maybe I should call the health-food store?

Default ok here is my attempt.

OK, here is my attempt.

I only had 3/4 cup coconut so to the almond flour I added 1/4 cup wheat protein isolate.

I also tasted the batter and I was not happy with the sweetness so I added 1 tablespoon sf coconut syrup and 1 tablespoon granular erythritol. I also used the xanthan and the baking soda.

They turned out very nice, they had a crisp outside and a moist inside.
Although I like almond I felt it overpowered the coconut and I don't think it was just the 1/4 cup I was short.

Next time I will try a combination of flours, perhaps a 50/50 with wheat protein isolate or carbquik.

Anyway here they are:

I find my unsweetened coconut at Super Wal-Mart, I believe the brand name is Eileen's.

All my local health food stores have unsweetened dried coconut. I haven't actually looked at a regular grocery.

I'm not sure the coconut is actually intended to be a flavor. I think the function in the recipe is for texture. For a more coconut taste, I'd add extract.

Cocolate chip has been such a raving success that I'm not going to make any more. Too addictive, even for a low carb treat. Dried blueberries with macadamia nuts has been a success, and I'm going to try orange flavored with dried cherries to replace the traditional pastry on Xmas morning.

They have an amazing unsweetened coconut you can order online that tastes like candy. They use a different drying process. I have been a tad to broke to order online lately so getting ordinary unsweetened coconut at a local natural deli/health food store

Did you ever check out the coconut flour from that site? I see they say it has a lo GI but I can't find the nutritional data on it. Anybody know the carb count for coconut flour?

I find that very interesting. To me almond flour has no particular taste at all. I'll have to ask the DH if he notices an almond flavor.

I'll have to check out that sweet unsweetened coconut. I might be able to cut back the splenda even more.

I havn't tried the coconut flour yet, I think it's a newer product. I have ordered thier coconut oil for a long time as it is virgin and has a very pleasent taste. I also tried thier coconut cream which is almost like a soft cream cheese instead of coconut milk.

Coconut is fairly low carb thanks to all the fiber. There is also a large group of people that swear it aids in weight loss and general health.
