I finally made one of these tonight, after hearing about them for years lol and OMG it was so tasty!!! I used a tiny dab of SF strawberry jam in the middle and wow!!

Wow. I just tried this today, and it's AMAZING. I made the original recipe (with lemon) plus I put a tablespoon of Walden Farms no carb orange marmalade in the middle. It was so good! And it looked just like a big fried egg with the dollop of orange in the middle. Really cute .

Oh, I forgot to add that I used a tablespoon of xylitol to sweeten it. So far no intestinal distress...fingers crossed!

Ok, I don't care that this is an old thread and probably no one will read it. This recipe is eternal! So, this morning I did the same recipe except I decreased the xylitol to 2 teaspoons and it was plenty sweet. Also, on the advice of some others on this thread, I tried frying it and the result was a delicious pancake! I put some Walden Farms no-carb blueberry syrup on it. Oh, and I fried it in salted butter, and the sweet/salty combo really made it.

I typically ate this hot for breakfast. Having to start working at an insane hour on a few days a week, I started making up one and taking it to work and putting in the fridge.

The taste and texture was much better cold, I was surprised. One day I forgot the sweetner and it was horrid. The whole thing turned out like rubbery, cold, scrambled eggs. Def remembered to add sweetner after that point.

Thanks for coming back to this thread. It's helped me get back to plan. and I've lost about 5lbs this week. Yea. I made a pumpkin pie kinda thing and who ever said it was better cold was right on target. I eat half just out of the mic and put the other half in the frig for later. As a late night snack it was lovely. T=So thanks again.

OHMYGOSH this is yummy! I did not add lemon or vanilla but some sf davinci's rasp. syrup and a tsp of cocoa powder. Ate with a dollop of butter while hot. So good I'm thinking about another... Also, sweetened a little with about 3 drops stevia, not splenda.

It's just totally amazing! This tread is still going after all these years! However, I haven't made these in years, but was wanting something sweet tonight so came looking. I will be making this shortly... yum!

Same here. I like to make mine then put it in the freezer to cool a bit and it it like a real danish. I might try mine with coconut sugar instead of the splenda this time.

I loved this recipe back in 2003 when I first did low carb and 13 years later I still remember it as one of my favorite recipes. Add a little SF jam and you'll be in heaven.

Haven't made this in a while .. must change that!!!

If I could offer a tip .. Microwave ovens have changed over the years.

This thread is 18+ yrs old. Back in 2001, most microwave ovens averaged 700 watts. Nowadays, microwave ovens are 1100 or more watts. This affects the time and power that you'd use to achieve the same results.

My current oven is 1100 watts. When I cook this Mock Danish on High for 2 minutes, I end up with rubbery scrambled eggy cheesy "thing".

Instead, I choose 50% power, and 1 minute:30 seconds. Perfect "creamy cheese-cakey" result every time.
