Default spaghetti squash in action.

found this site on internet at Martha's. It's a video of her cooking spaghetti squash and it looks like the real thing. I'm going to give it a go tomorrow.

The sauce is very tomatoy (yumm ) but I think I'll try using red capsicum sauce instead and leave out the breadcrumbs. Keep it low carb as possible.

Maybe I have left it too late too but I am off to Sydney tomorrow and will hunt around for Spagetti Squash. Think my father grew it for a while as he experimented with gourds and the like. They and I live near Jervis Bay, NSW South Coast.
In the meantime chokos are plentiful and I have been making chips with them. I dry them a bit after peeling and add cummin and ground corriander to the raw chips then deep fry.
Stew a couple of them with a quince or an apple and it makes a lower carb version of stewed fruit.
I am going to used some cooked riced cauliflower with salmon to make patties in place of the mashed potatoes I once would have used, plus an egg, herbs etc.

Did not find the squash in Sydney but it was in the vege shop right near me in Nowra! Yellow skin marrow with a sticker on it calling it Vegetable Spaghetti. I cooked up an eighth of it and made a cream sauce with mushrooms, bacon and cheese to top it. A great addition to my diet and they cost $5 each. I have saved the seeds hoping they are not a hybrid so I will grow them in spring. If I am successful I might end up supplying the markets!

I planted some of my seeds in late November and they have shot off everywhere! Notice some small squash forming and lot of flowers. Looks like we are going to be able to harvest some in a month or two!

Well the spaghetti squash has taken over my vegetable gardens. I have eaten one when it was quite young. Cooked it up like a zucchini, skin and all with rhubarb for a dessert.
There would be about 24 of the squash lurking under the leaves and are about 16+ cms round and up to 30 cms long and some are starting to get a yellowish colour to the skins. I will be able to take some into the markets perhaps next year as I am going to try to use at least one a week and see how long they keep for.
Hopeful they float too as it has been teeming for two days now so it is a bit waterlogged and very humid!

I went to Harris farm Markets today and they had not got any, at least they knew what it was, but they said they did not know if they were getting any in at all!
Maybe growing them would be a good idea! I just need to find out where to get seeds and also if you can store them for long periods of time, just incase I end up with hundreds of them!!

Well, this is my second year of growing spaghetti squash and they are a huge success. The first year I grew in excess of 40 and they lasted right throughout the year, except for the ones we ate!
They are doing well again this year.
I came across someone talking about zucchini candy on Facebook and looked it up and tonight I made spaghetti squash candy as I think that it is more the right density needed.
I substituted xylitol for sugar in the syrup, added the juice of two limes, cooked the squash intil just slightly softened and the vegetable was permeated with the syrup, drained it the dried it in a low oven for some hours.
What a great sweet treat that is all vegetable.

I'm going to use spaghetti squash from now on. Sounds so much better in every way.
