Default Beer Braised Cabbage

Beer Braised Cabbage


Servings: 8

This recipe was originally Emeril Lagasse's "Turbodog Braised Cabbage". I simply use light beer instead of the Abita Turbodog to cut the carbs. Turbodog beer is made by the Abita Brewing Company and is a New Orleans local favorite. If you can ever get your hands on some Turbodog beer, I highly recommend you try it out with this dish. (If you are celebrating a goal of coarse )


Ingredients:
  • 1/2 pound bacon, chopped 1/2 inch peices
  • 2 cups thinly sliced onions
  • Freshly ground black pepper
  • 1/4 cup Creole mustard
  • 1/2 head white cabbage, shredded (about 1 1/2 pounds)
  • 2 teaspoons chopped garlic
  • 1 (12) ounce light beer
  • 1/4 cup heavy cream
Directions:
  1. In a large skillet over medium heat, render the bacon until crispy.
  2. Add the onions. Season with pepper. Sauté until the onions are soft, about 4 minutes.
  3. Add the mustard and cabbage. Season with salt and pepper. Sauté for 3 minutes.
  4. Add the garlic, and beer, cover and cook for 10 minutes, stirring occasionally.
  5. Mix in the heavy cream, and let reduce uncovered for 10 minutes or until cream has thickened.
