Talking Stevia sweetend chocolate!

OMG--recently found the best treat ever--stevia sweetened chocolate bars! I didn't even know they existed. The one I bought (not cheap) was Lily's 40% cocoa roasted almond. It's sweetend with stevia and erythritol--not terribly sweet but just where I like it--yum!

Each bar (2 servings per bar) has 22 grams total carbs, 13 grams fiber, less than 1g sugar, and 5 grams erythritol. So I'm assuming net 4g carbs? am I reading that right? I tested my blood sugar at 50 minutes after eating, and am at a safe 124, so glad to see that. It's so nice to have some options this time of year, when everyone is indulging so much.

Good but Not cheap for sure. Whole Paycheck carries many flavors of Lily's, so do a few local grocers as well, been around here a while. Instead I've become use to Trader Joe's Dark Chocolate Lovers bar with 85% cacao. 13g, 5g fiber for about 1.5 oz. half of that might be satisfying because it is intense flavor.

I used to eat Lily's (before my new WOE) and I was really wanting some the other day and negotiating with myself whether I could have a bar over Christmas or not. LOVE it!

I can only do the milk chocolate as the dark breaks my face out (too much cocoa for my body :-()

Just ordered the extra dark sea salt from a seller at Amazon. I usually have only one square when I eat really dark chocolate, so that's probably going to be about 1/4 of a serving.

Best part is that it's eligible for Prime, so I can put it in my own Christmas stocking, while I put the chocolates I bought in Italy in the others.

Yum, I have Prime too, just did a bunch of ordering but never thought of checking for chocolate .

The jury's still out on whether I will get a bar. Although right now I feel like I can control myself, once I taste it, that might be another story. In the past I would eat the whole bar in one day

For Christmas I was also thinking of making a mini berry cobbler with almond meal, flax, sweetener and coconut oil. That probably would be safer.

Maybe I shouldn't be thinking along these lines at all though!!!

Wow, just looked at the Lily's on Amazon, they are only about $3 here in AZ at Natural Grocer, not $8.95 like on Amazon, eek!!!

Okay, I've got a new Christmas project--I'm going to make homemade chocolates. That way I can make it exactly the sweetness that I want, and more of a milk chocolate (low cacao) flavor. I also want to try some white chocolate. I can't handle the really dark chocolates because the theobromine affects me too much (ruins sleep). Interesting 1Dogday that it affects you that way, never heard that. Now it's just a matter of getting the materials together and figuring out how to do this. If anyone has taken on this project, I'd love some input!

For my family, I'll make some sweetened with honey, they'll like that, not super sweet. None of them trust stevia or erythritol (silly). Maybe add chopped nuts, dried fruit, etc...I get extra points for anything homemade. Especially if I can make it look interesting.

I tried a new brand of stevia (only) sweetenend chocolate, and I was not impressed. Very dark and chocolatey, but not sweet enough and a bit of bitter aftertaste. I'm really glad my first stevia sweetened bar was Lily's.

I've made this recipe of Carolyn Ketchum: http://alldayidreamaboutfood.com/20...luten-free.html They were good. That was before Lily's choc chips came out, which are better, imo.

I also like Chocorite bars: http://www.netrition.com/healthsmar...olate_bars.html
Lower priced and fairly comparable to Lily's. The milk choc/pb is really good. Beware the Chocolite though; sweetened with sucralose.

Here's Maria Emmerich's recipes for white, milk and dark choc: http://mariamindbodyhealth.com/sugar-free-candy-bar/

Nicekitty, I like the slight bitterness of very dark chocolate; I ate it before I even cared about carbs at all.

WAY to dangerous for me to do that!!! You must have good control, chocolate is one of the only things I wouldn't trust myself with in bulk!

I think it's the theobromine that bothers me, sleep wise, jitters/heart palps and huge breakouts, waaaaaa!!! I've retested the theory enough times to know it's true, with raw handmade chocolate (at our local shop) .

My Naturopath is one of the only people I know who says it's bad for you and not to eat it in any form.

I play tricks on myself, putting things like chocolate in less obvious locations.

But the most important part for me is that it IS bittersweet--the flavor is overwhelming, almost (I usually buy 85% cacao) and one section of a bar is plenty, when the flavor is so strong.

That, and my appetite for sweet anything keeps dropping all the time.

Ever since I discovered 100% chocolate, nothing less will do, even Lindt 99% . My favourite is Labooko (Peru), which I can buy from the health food stall on the market (yes, expensive at £3 for 65g, but I'm worth it ). For Christmas I have treated myself to a selection pack of 4 different 100% chocolates from Cocoa Runners.

You won't like them if you are a milk chocolate fan, or can't take too much cocoa at once, but there's only 9.6g carbs in 100g and even I can't eat more than 20g at once.

JLX--thanks for the links! I've printed out some of those recipes and bought ingredients today (food grade cocoa butter was hard to find). The candies look luscious and I'm going to keep them in mind for future.

Milk chocolate has milk in it--right? I keep finding milk "powder" on bars. Wonder if I can put cream in? More research needed....

Trader Joe's has a line of chocolate bars "Simply Sweet" I believe is the name, that has no sugar. But the very first ingredient is maltitol, further down, inulin. I don't think my system would be thrilled with the maltitol. I'm kind of surprised that they don't have a stevia and/or erythritol sweetened chocolate bars--they have such a huge selection! Got the baking chocolate there--$1.99 for 4 oz. which seems fairly reasonable.
