My two cents is that I disagree with the posts that we have been brainwashed to eat cereals. Coming from a cold weather state, hot cereals are comfort food for me.

My alternative to cream of wheat:

3 tbsp. flaxseed meal
cream (enough for the consistency you like)
Heat for 1.5 minutes
Add splenda to taste.

I find this is also a great way to get enough fiber to keep me regular as I used to experience consitpation on low carb

The most this bowl of "cereal" will cost you is 2-3 carbs (flaxseed meal has 4, but 3 is fiber, cream has 1, you may need to count 1 depending on how much splenda you use.)

When I get in a cereal mood, here's what I do:

1 TBLS or so of rolled oats
a big handfull of unsweetened coconut flakes
sliced almonds
chopped pecans
cinnamon to taste
splenda to taste

I normally use half and half on it, but cream would be lower carb. I have no idea what the protein/carb amounts are but a bowl in the morning will normally last 'til dinner, hunger wise.

There's a few great granola recipes in Dana Carpender's 500 Low Carb Recipes cookbook.

When I eat low carb and/or high fiber cereal, it's usually not my entire breakfast. I'll mix it with yogurt or eat it and have a soft boiled egg or two on the side. It's more of a complement to my breakfast rather than the entire thing.

Perhaps repeating myself here, but on occasion I have 1/2 cup of All Bran with Extra Fiber (7 ECC) with 1/4 cup heavy cream. Not every day, just once in a while. I like the taste.

I use that one too. I can't get it around here, so I'll buy it when I visit the Midwest and bring it back with me.

Since wheat & grains aggravate my allergies & asthma, I make my own grain-free & wheat-free hot cereal from:
~21 g flax seeds
~36 g almonds
1 t psyllium
1 t cinnamon + cloves or nutmeg if you like them
protein powder to add up to 27 g protein (my per meal quota)
dusting of stevia
dash NoSalt

I grind/pulse it all up in my Magic Bullet, add boiling water & stir, let sit a minute & enjoy - plain or with butter, cream, or a bit of coconut oil. It has the same consistency as oatmeal.

Typically I make 14 servings that I store in individual baggies in the freezer. The Nuts thread has me planning to use pecans in my next batch. This is a very quick breakfast!

I must say that I disagree with the cereal theory...I enjoy it because it is quick and I also am menopausal so I have to get in my soy... I use Fiber One cereal which has 25 carbs, 14 fiber..ecc 11... It keeps me much more regular and I enjoy the meal, usually with 2 boiled eggs...
