Default coleslaw

Hi. I have had a bad Christmas season although I was able to maintain, I felt like I was eating anyting and everything. I am back on track now and hoping someone might know of a recipe for a low carb coleslaw dressing. Thanks for your help.

real mayonaise
whipping cream
Mrs. Dash
splenda (if you want)
maybe a splash of vinegar

mix it up and pour it on -- my fave

Or you could try this one which is wonderful. I found it on the Atkins Low Carb list posted by Weazelle. (find it at http://www.titanic.kn-bremen.de/salad13.html)

2 or 3 T artificial sweetener
1/2 cup mayo
1 1/2 T white vinegar
1 tsp to 1 T horseradish (I use prepared)(amount depend on if you like it a bit spicy)

Mix together. Pour over cabbage and mix.

The original recipe suggested 4 cups shredded cabbage sprinkled with 1/2 tsp salt. Let sit 10 minutes then put in a clean tea towel and squeeze out all the water you can. Its good right away but if you refrigerate it it seems to soak up the dressing. Keeps for several days in the fridge.
