Default Birthday cake?

Karen,

I wonder if you have any good recipe for a low-carb birthday cake. I want to make a surprise treat for my BF who is diabetic.

My only cooking experience in low-carb deserts didn't go any further than ice-cream or SF jelly, so I'm a bit worried to experiment much, and lack of time doesn't help either. He loves chocolate, so I was wondering if I can make a chocolate cake or something like that.

Default " carrot cake"

Hi...i'm not Karen but i used to be on the " Food and the Gut reaction" diet and they had a carrot cake recipe that i adapted for the low carb lifestyle, so here goes.
2 1/4 C ground almonds
2 grated carrots
1/3 C raisins
1/2 C chopped walnuts
1 1/2 tsp baking soda
3/4 C butter (melted)
3 eggs (beaten)
2 tsp cinnamon
2 tsp vanilla
8 pkgs sweetner

mix almonds, carrots, raisins, walnuts, soda, cinn, and sweetener in large bowl. then add butter to beaten eggs and vanilla, slowly. Mix well and pour into a well greased 11 in. oblong pan. bake 45- 60 min. at 350 F.

Spead with a mixture of cream cheese, vanilla and sweetner to taste.
add orange zest to add a little zip to the icing.

Default choc cake

Hi
Me again.
Just had a brainwave while submitting the carrot cake recipe.
Chocolate cake

Take the above recipe and leave out the carrots and raisins and replace them with 2 Tbs. cocoa and 3/4 C prot. powder.(soya)
add 1/4 C decaf coffee to the butter, egg, vanilla mixture
Mix all ingred. well and turn into a well greased 8 in pan.
Bake as above.
Bon apetit!!!!

oops! just made the choc. cake and its dry and not sweet enough.
up the sweetner to possibly 1 C splenda and increase the butter by 1/4 C and the coffee by 1/4 C anyway i'll try it andlet you all know.
Sorry hope nobody ran to the kitchen to make the cakes.

I'm feeling kinda dumb because I never saw this post when it was first posted!

Anyway, I don't have a chocolate cake - I lean towards creamy desserts and cheesecakes. But lowcarbluxury.com has many good recipes. Here's the link to the desserts. What about a chocolate mousse for next time?
