Default Crockpot Carnitas

CROCKPOT CARNITAS
3-4 lb. pork roast (shoulder or butt)
2 cloves minced garlic
1 cup chopped onion
1 tsp salt
1/2 tsp black pepper
1/2 tsp oregano
1/2 tsp chili powder
1/2 cup water

Mix garlic and seasonings together, rub onto both sides of roast. Put half of the onions in the bottom of the crockpot, then top with the roast and the remaining onions. Pour in water.
Cover and cook on high 1 hour, then low for 6-8 hours.
Shred meat with two forks during last hour.
Pour out the liquid into a skillet and boil till amount is reduced to approx 1/2 cup.
Add shredded meat and saute until browned.

I like mine in a bowl with sour cream, jack cheese and cilantro.

I see affordable 'butt roasts' sometimes but had no idea what I could do with them (my kid freaked when she saw the name. "I'M NOT EATING THAT!" LOL! she'll never know...) I'll try this, it sounds pretty good.

FYI--on a pig, the "butt" is the shoulder.

I'm friendly with the people who work in the meat department of my grocery store. One of the women and I always have a laugh when I ask if they have any pork butts---your butt up on your shoulder???!!! How can that be physiologically possible????!!!

This one is going into "heavy rotation" at our house.

My wife can't deal with black pepper, so I left that out of the recipe (it's easy enough to shake some onto mine before I eat it). I got everything ready to go into the crock pot the night before, then dumped it all in before I went to work the next morning. By the time I got home, the slow cooking was finished. The excess liquid boiled down easier and faster than I thought it would. Real easy recipe, except for the number of large dishes that had to be washed afterward.

I put a cup of this into a microwaveable container and add a couple of spoonfuls of canned green chiles. At work, I heat the pork and chiles in the microwave while I put some sour cream and salsa on a couple cups of lettuce salad. I put the heated pork and chiles on top of the salad, and enjoy.

Sounds so evil.........got to be good!

I will definitely have to try this. My BF doesn't like Mexican, or anything with any kind of spice, so I never have had carnita's. I have a friend who is always boasting how good they are.......I MUST try this!!!

I made something similar but added a can of salsa verde. When I ate it I topped with black olives and guacamole or diced avocado. Quite delicious!
