Default Faux chicken nuggets..

Somewhere in my low carb travels I came across a recipe for 'faux chicken nuggets' and decided to try them. They called for mixing pork rinds with parmesan cheese and mixing it in the blender for the breading for the chicken chunks. I tried this and the pork rinds (I'm thinking because of the oil in them) wouldn't really turn into crums in the blender so I put them in a plastic bag and crushed them with a rolling pin. I added dried basil, sm. amount of dried onion, and some garlic powder, just a bit. I dipped my chicken chunks in a little egg and cream before tossing them in my pork rind breading so the breading would stick better. Then I fried them in some olive oil. Except for some of the breading coming off in the frying process they came out very tasty. I think I'll try baking them next time. The recipe called for using Franks Redhot Original sauce which is zero carb but I opted to use my home ranch dressing for dipping. Just thought I'd share, kind of a lot of work but surprisingly very good!

My kids find the Parmesan on its own too salty. But it's delicious on zucchini - slice, dip and bake, then dip in ranch or sour cream.

I think one of the free books from Mark's Daily Apple has a recipe for a crusted chicken that uses almond flour, coconut flour and some other stuff. I haven't tried it yet but it's on my must try list. You get the free ebooks when you sign up for emails and updates.
